How to Make a Gluten Free Cake in a RV!

Sounds impossible right?

Creating a gluten free birthday cake in a RV oven in the summer in Florida likely means it will take 3 days to cool off your RV before it is tolerable again, right? So, we had to think outside of the box. Instead, I decided to avoid the oven at all costs. I instead made a Gluten Free Dirt Cake. It worked perfectly! Our 2 year old was happy and so was the rest of the family. Here is how we made it…..

Ingredients first:

1/3 cup butter, softened

1 8 oz container of frozen whipped topping, softened

2 packages gluten free chocolate sandwich cookies (I use the Walmart brand)

2 packages chocolate instant pudding

8 oz block cream cheese, softened

1 cup powdered sugar

3 1/2 cups milk

**Of note, I doubled this recipe to make sure I had enough filling for the container I was utlizing.

First, you want to crush the cookies. You can do this in a zippered plastic storage bag with a rollerpin or something similar. But, I utilize my Ninja Blender System with food processor attachment for this since my blender travels with me wherever I go. I dumped the crumbs in a plastic bag and set aside. Next, the filling! In my Ninja blender, I creamed together the butter, cream cheese and powdered sugar. Once mixed up, I added the pudding mix and milk. Once complete, I poured into big bowl and mixed in the whipped topping until thoroughly mixed in. Now the layering begins. You can do this in any deep dish or trifle bowl you wish. However, let’s be real….we are in an RV. So, out comes the large 9x12 plastic storage containers. First I covered the bottom with cookie crumbs and then covered with a layer of pudding mix. I continued this until all was gone or I ran out of room in my container. I always finish with a layer of cookie crumbs on top to give this the “dirt” look. You can add gummy worms as decor if you wish. We did not. Put a lid on top and keep in the fridge for at least 2 hours before serving. This gives the pudding time to set.

For the birthday, we were able to plop a big Number 2 candle in the middle for her to blow out. Success!! It was a hit! The benefits for this were numerous:

  1. We did not have to heat up the RV which requires hours to cool back off again in the Florida summer.

  2. We did not waste any propane in the RV oven.

  3. We did not burn a cake which easily happens in an RV oven.

  4. We did not have to do any decorations with icing.

  5. We did not have to spend a fortune for a specialty bakery to make a gluten-free cake.

  6. We were able to enjoy a nice, cool dessert on a hot, muggy day.

Remember this dessert option when you are traveling in your RV this summer! It is a keeper!! Our Nomadic Homeschoolers group loves to have a good birthday party mostly for the desserts. I may have to make another one of these for an upcoming potluck!!
